Refreshing Watermelon Mint Lemonade

It’s been blistering hot here in the Salty City. But I should be thankful, I know. A few weeks ago we were at 103°F, and now the barometer is hitting the high 90s. But still, SWELTERING. The kids are home from school, everyone’s dragging and we’re all melting a little. We’re looking for ways to stay cool, and we’ve already been to the pool too many times this week. What’s refreshing, delicious, cooling and can be enjoyed on our own front porch? Watermelon. Mint. Lemon. Ice. Watermelon Mint Lemonade! Let’s do this friends!

Watermelon Mint LemonadeThis refreshing Watermelon Mint Lemonade whips up quickly in the blender (my most used kitchen tool in the summer), and it’s the perfect way to whittle down that massive watermelon taking up space in your fridge right now. That’s right. You know what I’m talking about. It’s about the size of a soccer ball and it’s parked in the middle of your fridge blocking your access to, well, EVERYTHING! Take that massive watermelon out of the fridge, chop it up and throw it in the blender with some lemon juice, mint, agave nectar and drink that baby right up.

I bet you’re ready to start making this super simple, ultra refreshing Watermelon Mint Lemonade that’s going to cool you right off. Gather up your ingredients, pop them in the blender, and whip up some Watermelon Mint Lemonade Because you know what’s good for you on a hot summer day.

Refreshing Watermelon Mint Lemonade

A refreshing summer cooler that combines peak season watermelon with cooling mint and juicy lemons.

Ingredients

  • 4 cups cubed watermelon
  • 1 cup fresh lemon juice about 4 large lemons
  • about a dozen leaves of fresh mint
  • 2 tbs agave or preferred sweetener - adjust to taste
  • 2 cups ice

Instructions

  • Place all ingredients in blender and blend until smooth. Pour into four glasses, top with more ice and serve.

Notes

I like it pulpy, but if you prefer, pour the blended mixture through a strainer before serving. If you prefer your drinks to be bubbly, add a splash of sparkling water after serving. Also, do I really need to mention that Watermelon Mint Lemonade makes a super delicious cocktail spiked with your favorite vodka? (You were already thinking that, weren't you?)
